Omelette with rainbow trout
Omelette with rainbow trout is eggs that carry the fish, not the other way round. The fish is already fried or smoked. Dill. Fold. It is breakfast and it is a camping stove – not fish pie.
How to do it
The eggs
Beat them pale, not to a foam. A splash of milk or water. Go easy on the salt if the fish is smoked.
The pan
Medium heat, butter. Draw the edges in so the new egg runs out. Full flame on a camping stove burns the bottom before the middle sets.
The fish
Already cooked. Flake it, put it on while the middle still glistens. Fold. Crème fraîche if you want a cool contrast to the smoke.
Serving
Straight from the pan. Crispbread. At the pond: the same washing-up as the fish pan, see camping stove.
Tips
Too much fish makes the omelette cold in the middle. 150 g is enough for four eggs. Packing list: food by the water.
FAQ
Raw fish in an omelette?
No. Fry it or use ready-smoked. The egg does not cook a cold piece in the middle safely enough.
Camping stove?
Yes. The same pan as rainbow trout on a camping stove. Eggs cannot take a full flame.
Breakfast after a night session?
Yes. Smoked fish from the fridge, eggs, coffee. See food by the water.
