Baked rainbow trout with tomato and capers

Tomato and capers on a tray is a different oven from baked rainbow trout. There the fish is alone with butter. Here rainbow trout gets a sauce from burst tomatoes, salt from capers, bitterness from olives. The fish goes on when the tomato has already given.

How you do it

The tray

Tomatoes first, ten minutes. They should start to burst before the fish goes in. Otherwise the fillet is done before the sauce.

The fish

Oiled, short time. Lemon juice off the oven.

Serving

Bread that wipes the tray. Rice. Not a cream sauce — that is lemon and dill sauce.

Tips

The same tray without fish, then pasta if you have flakes left. Capers from a jar, not salt in bulk.
